One of the least fishy fishes (say that ten times fast), halibut has a mild and sweet flavor. Grill it, bake it, broil it, fry it, or even use it as a chicken substitute. Yeah, seriously. Given its mild flavor it's actually used quite frequently as a chicken substitute! Who knew that chicken swam in the sea?! Actually, interesting sidebar, halibut that are too small to legally harvest are actually called 'chickens.'
Thaw before cooking.
As a rule of thumb, you should cook your halibut until a fork inserted into the middle and twisted causes the fish to flake, and the fish no longer looks translucent.
